Mediterranean Chickpea Salad

Serves 4

Ingredients:

• 1 can chickpeas, rinsed

• 1 cucumber, diced

• 1 cup cherry tomatoes, halved

• 1 bell pepper, diced

• 1/4 red onion, thinly sliced

• 1/4 cup parsley

• 1/4 cup crumbled feta (optional)

• Dressing: 3 Tbsp extra-virgin olive oil, juice of 1 lemon, 1 garlic clove minced, 1 tsp oregano, black pepper.

Directions: Combine vegetables and chickpeas. Whisk dressing, toss together, and refrigerate 20 minutes before serving. Excellent alongside grilled salmon or chicken. Feel free to include a whole grain for a heartier salad. Enjoy!
